Sorghum
What the heck is sorghum anyway?
Well, it’s only the fifth most produced cereal grain in the world. That’s even more than oats and rye! It’s related to corn, but it has fewer calories, less fat, and doesn’t contain certain allergens that trouble people with corn allergies.*
Like corn, sorghum is used to make all kinds of products, from flour for pancakes to the syrup that goes on them. People who have trouble eating corn love sorghum, as well as people with Celiac Disease, because it’s gluten-free and extremely versatile. And, just like corn, sorghum pops when you heat it. See the picture below from the Wall Street Journal? Tiny little “popcorn” (without the corn of course).
Why Sorghum?
The American Academy of Pediatrics warns that popcorn hulls a choking hazard for children. Plus, who likes getting those hulls stuck in their teeth and gums? We call that Sore Gum Syndrome (SGS) and nobody likes SGS.
Popghum is also slightly sweeter and nuttier than popcorn, has a better crunch, and it’s high in fiber, protein and iron.
